A traditional pizza oven is a masterpiece of functional design, refined over centuries. The key components are:

The Dome

The dome is the defining feature — a hemispherical or slightly flattened vault that captures and reflects heat downward onto the pizza. This shape is not accidental: it creates a natural convection current, drawing cool air in through the door and exhausting hot gases upward and out through a chimney (in modern designs) or the door itself.

The dome is typically constructed from refractory bricks or clay — materials that absorb and store heat efficiently, then release it slowly and evenly. A well-built dome can hold baking temperature for hours on a single firing.

The Floor (Hearth)

The floor, or piano di cottura, is the surface on which the pizza bakes directly. It must withstand extreme temperatures and conduct heat evenly. Traditional floors are made of firebrick or refractory clay tiles, laid in a bed of sand and salt to help retain heat.

  • Beech (faggio) — a popular alternative. Burns hot and clean, widely available in Italy.
  • Olive wood — prized in southern Italy. Extremely dense, burns very hot, imparts a distinctive fruity aroma.

  • Almond and fruit woods — aromatic and flavourful, though less common.

Softwoods (pine, fir, spruce) are avoided — they burn too fast, produce excessive smoke and resin, and can taint the pizza with a bitter, sooty flavour.

Wood must be well-seasoned — dried for at least 12–24 months — to burn efficiently. Wet or green wood produces steam, smoke, and poor heat, ruining both the oven temperature and the flavour of the pizza.

Temperature: The Mathematics of Heat

  1. Build a small fire in the centre using kindling and a few split logs
  2. Feed gradually, adding hardwood as the fire establishes
  3. Spread the embers across the floor once the fire is strong
  4. Push the fire to one side of the dome, creating a hot zone and a cooler zone
  5. Maintain a rolling flame against the dome wall, which reflects heat downward

The flame against the dome is essential — it is the source of the radiant heat that bakes the top of the pizza. A pizzaiolo without an active flame is cooking with a dying oven.

Maintaining the Fire During Service

Throughout service, the pizzaiolo must constantly tend the fire: adding wood, raking embers, and adjusting the flame to keep the temperature consistent. This is a skill developed over years — reading the oven as one reads a living thing.

The fire is typically kept to one side of the dome. Pizzas are launched into the centre, then rotated with a metal peel (pala) to ensure even cooking. The side nearest the flame cooks faster and must be watched closely; the side away from the flame needs extra time.

For the master pizzaiolo, the oven is a partner, not a tool. It has moods, preferences, and a personality shaped by its age, its construction, and its fuel. Experienced pizzaioli speak of their ovens the way sailors speak of their ships — with respect, affection, and a touch of superstition.
